Protein Cupcakes

Protein Cupcakes

If you are anything like me you love sweets. I am a sucker for baked goods especially cupcakes.
Here is my take on a healthier version to satisfy your sweet tooth. This recipe is toddler approved, seriously my 3 year old ate an entire batch herself :)

(Vanilla Cake mix with Vanilla Protein)

Cupcake Nutrition:
Servings - 2 (one serving is 8 mini cupcakes! :)
F6/C18/P16 per serving

Light Chocolate Cupcake Recipe:
1 egg
1 scoop of your favorite protein, I used Gold Standard Chocolate Whey
1/4 C white cake mix (you can use any cake mix you want, if you want a darker chocolate taste use a dark chocolate cake mix. The combinations are endless)
1/4 C Unsweetened Almond Milk
**If you like things super sweet add sweetener to the batter recipe




Directions:
1. Mix protein powder and cake mix in small bowl, add egg and milk and continue mixing until nice and smooth.
2. Spray mini cupcake pan with cooking spray.
3. Fill each cupcake 1/2 -3/4 full (don't over fill)
4. Bake at 350F for 6-8 minutes. Watch your ovens, as soon as you can insert a toothpick and it comes out clean take them out. Don't over cook.
5. Once you take them out of the oven immediately pop the cupcakes out onto a cooling rack

Light Chocolate cupcakes with Chocolate Peanut Butter frosting 
and Greek Yogurt frosting 

Peanut Butter Frosting:
2T PB2 chocolate
1T light whipped topping
*If you like things extra sweet add some Truvia or sweetener to the mix
Macros for entire recipe - F2/C6/P4 Makes enough for 2 servings.

Directions:
Mix 2T PB2 with 1 to 1 1/2 T water (depending on how thick/thin you want your topping use more or less water), mix well then fold in 1 T whipped topping.

Peanut Butter Frosting - I like mine a little runnier. You can make this frosting 
as thin or thick as you like. You can also add a sweetener like Truvia to sweeten it up a bit. 


Greek Yogurt Frosting:
2T non fat Greek Yogurt
2T whipped topping
Sweetener, I used Truvia in mine.
Macros for entire recipe -  F0/C4/P2 Makes enough for 2 servings

Directions:
Mix greek yogurt and sweetener together and once mixed well fold in whipped topping.


Enjoy! 


A couple other yummy combinations are: 
1. Citrus zinger cupcakes: Lemon cake mix & vanilla protein powder topped with greek yogurt, whipped topping and freshly squeezed lemon and orange juice.
2. Chocolate Pumpkin: Pumpkin cake mix & vanilla protein powder topped with Fat free chocolate pudding mixed with whipped topping.
